Ingredients:

  • 1 large cucumber, peeled and sliced

  • 2 tablespoons honey or agave nectar
  • 4 cups cold water
  • Ice cubes
  • Cucumber slices and mint sprigs for garnish

Instructions:

In a blender, combine the sliced cucumber, lime juice, mint leaves, and honey or agave nectar.

Blend until the mixture is smooth. Strain the cucumber mixture through a fine-mesh sieve into a large pitcher.

Stir in the cold water until well combined. Chill the minty cucumber cooler in the refrigerator for at least 30 minutes.

To serve, fill glasses with ice cubes and pour the chilled cucumber cooler over the ice.
