Rhubarb Lemonade Drink Recipe

Enjoyed on its own or as a refreshing accompaniment to a summer meal, our Rhubarb Lemonade is sure to delight with its vibrant flavor and refreshing tartness.

Rhubarb Lemonade recipe

Ingredients:

  • 4 cups chopped rhubarb
  • 1 cup granulated sugar
  • 6 cups water
  • 1 cup freshly squeezed lemon juice (about 4-6 lemons)
  • Ice cubes
  • Lemon slices and fresh mint leaves for garnish (optional)

Instructions:

In a large saucepan, combine the chopped rhubarb, granulated sugar, and water.

Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 15-20 minutes, or until the rhubarb is soft and cooked down.

Remove the saucepan from heat and let the rhubarb mixture cool to room temperature.

Once cooled, strain the mixture through a fine-mesh sieve into a large pitcher, pressing down on the rhubarb solids to extract as much liquid as possible. Discard the solids.

Stir in the freshly squeezed lemon juice until well combined.

Taste the lemonade and adjust the sweetness or tartness by adding more sugar or lemon juice, if desired.

Chill the rhubarb lemonade in the refrigerator for at least 1 hour, or until cold.

To serve, fill glasses with ice cubes and pour the chilled rhubarb lemonade over the ice. Garnish each glass with a slice of lemon and a sprig of fresh mint, if desired.

Stir gently before serving. Serve immediately and enjoy the tart and refreshing flavor of homemade Rhubarb Lemonade!
